Eggy Bread

It is generally known among my friends and family that I love to cook. After I have been around the world a few more times, worked as an art therapist, and continued on painting to my hearts content, I will set up a café somewhere and cook for people everyday. Out of all of the things I enjoy cooking, eggy bread (aka French Toast) is an easy crowd pleaser.

To be honest, I have always been somewhat surprised and lightly miffed with how people seem to gravitate towards my eggy bread over the far more complicated dishes such as Italian style baked chicken, penne with vodka sauce, or a carefully prepared chocolate silk pie. Yet, at the same time, when people you care about are able to take a moment and enjoy a meal in peace that you have had the pleasure of making, what is there to complain about really?

The key to it is to include some almond extract and add brown sugar to the pan as it cooks. I suppose the sky is the limit concerning what you may add to it at the end from jams to honey to cream cheese. However, the preferred manner to eat each piece includes a smear of peanut butter topped with a pouring of maple syrup. Enjoy!
